  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup light brown sugar (packed)
  • 11/2 teaspoons ground cinnamon
  • 1 large apple, peeled, cored, and chopped into small pieces
  • 2 tablespoons brown sugar for swirl topping
  • 1/4 teaspoon ground cinnamon for swirl topping
  • 3/4 cups confectioners’ sugar for glaze
  • 1/4 teaspoon ground cinnamon for glaze
  • 2 tablespoons water for glaze

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream butter and sugar until light and fluffy; add eggs one at a time.
  4. Alternate mixing in dry ingredients with milk until just combined.
  5. Fold in chopped apples mixed with brown sugar and cinnamon.
  6. Layer batter and apple mixture in the pan; swirl gently.
  7. Bake for 45-55 minutes or until a toothpick comes out clean.
  8. Cool slightly before glazing with a mix of confectioners’ sugar, cinnamon, and water.
