  • 1 cup uncooked quinoa
  • 1 can (15 oz) white beans, rinsed and drained
  • ⅓ cup red onion, finely diced
  • ½ cucumber, chopped
  • ½ cup fresh cilantro
  • 1 scallion
  • 12 cloves garlic
  • ¼ cup plant-based yogurt or olive oil
  • Juice and zest of two limes
  • 1 tbsp maple syrup

Instructions

  1. Cook the quinoa according to package instructions; rinse beforehand to remove bitterness. Allow to cool.
  2. In a blender, combine cilantro, scallion, garlic, yogurt (or olive oil), lime juice and zest, and maple syrup. Blend until smooth.
  3. In a large bowl, mix cooled quinoa with white beans, red onion, and cucumber.
  4. Drizzle the dressing over the salad and toss until evenly coated.
  5. Serve immediately or chill in the fridge for enhanced flavors before serving.
