  • 1 ripe avocado
  • 2 tablespoons olive oil
  • 1 tablespoon chili sauce (like Sriracha or Gochujang)
  • Juice of 2 limes
  • 1/4 cup red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 4 large tortillas or wraps
  • Optional toppings like shredded lettuce, sliced tomatoes, bell peppers, or pickled onions

Instructions

  1. Preheat oven to 425°F (220°C). Cut cauliflower into florets and toss with olive oil and spices. Roast for 25-30 minutes until golden brown.
  2. In a bowl, combine rinsed chickpeas with red onion, cilantro, lime juice, olive oil, chili sauce, spices, and salt. Mix well.
