  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Season chicken with salt, pepper, and dried thyme; sear until golden brown on both sides (5-6 minutes each). Remove and set aside.
  3. In the same skillet, sauté garlic until fragrant. Add mushrooms and cook until softened (about 5 minutes). Stir in spinach until wilted.
  4. Pour in heavy cream and chicken broth; simmer for 3-4 minutes until slightly thickened.
  5. Place seared chicken in a greased baking dish; pour sauce over it. Top with mozzarella and Parmesan.
  6. Bake for 15-20 minutes until cheese is melted and bubbly.
  7. Garnish with parsley if desired; serve warm.
