  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts
  • Salt and black pepper
  • 3 cloves garlic
  • 1 teaspoon Italian seasoning
  • Red pepper flakes (optional)
  • 1 can diced tomatoes (14.5 oz)
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Cook pasta according to package directions in salted boiling water; drain.
  2. In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then cook until golden brown (5-7 minutes). Remove from skillet.
  3. Sauté minced garlic in the same skillet until fragrant (about 1 minute).
  4. Stir in Italian seasoning and red pepper flakes (if using).
  5. Add diced tomatoes, chicken broth, and heavy cream; bring to a simmer.
  6. Return cooked pasta and chicken to the skillet; toss to coat.
  7. Stir in mozzarella and Parmesan until melted.
