  • 1 cup granulated sugar
  • ½ cup packed light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ½ teaspoon sea salt
  • 1 ½ cups sweetened coconut flakes, divided

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a stand mixer, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
  3. Add eggs, vanilla extract, and coconut extract; mix on high speed for an additional 2-3 minutes.
  4. In a separate bowl, whisk together flour, baking soda, cream of tartar, and sea salt.
  5. Gradually combine dry ingredients with the wet mixture on low speed until just blended.
  6. Fold in most of the sweetened coconut flakes (reserve some for topping).
  7. Drop tablespoonfuls of dough onto prepared baking sheets, spacing them about two inches apart.
  8. Sprinkle reserved coconut flakes on top before baking for about 9-10 minutes until lightly golden.
  9. Allow cookies to cool completely on a rack.
