  • 1 large head cauliflower, chopped into florets
  • 1 (15 oz) can chickpeas, rinsed and drained
  • 1 Tbsp curry powder
  • 2 tsp paprika
  • 3 Tbsp extra-virgin olive oil
  • 2 cups cooked white basmati rice (or grain of choice)
  • Fresh herbs (cilantro and parsley for the sauce)
  • ¼ cup tahini
  • 2 Tbsp fresh lemon juice
  • ½ tsp minced fresh garlic
  • ¼ tsp ground cumin
  • ¼ tsp kosher salt
  • ¼ tsp black pepper

Instructions

  1. Preheat oven to 425°F.
  2. In a bowl, combine curry powder, paprika, salt, black pepper, and olive oil.
  3. Toss cauliflower florets and chickpeas with spice mixture on separate baking sheets.
  4. Roast for about 30 minutes, tossing halfway through.
  5. While they roast, blend cilantro, parsley, tahini, lemon juice, garlic, cumin, salt, and pepper until smooth.
  6. Serve by layering rice with roasted vegetables and drizzling with Green Tahini Sauce.
