Ingredients

Scale
  • 12 ounces pasta (fettuccine or linguine)
  • 2 tablespoons olive oil
  • 2 medium leeks (white and light green parts), thinly sliced
  • 8 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup dry white cooking broth or vegetable stock
  • 1/2 cup heavy cream
  • 1 cup shredded Gruyere cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve some pasta water before draining.
  2. In a large skillet over medium heat, add olive oil. Sauté the leeks for about 5-7 minutes until caramelized. Add the mushrooms and garlic; cook until tender.
  3. Pour in the broth and heavy cream, stirring well. Let it simmer for about 5 minutes until slightly thickened.
  4. Stir in the Gruyere cheese until melted. Adjust sauce consistency with reserved pasta water if needed. Toss cooked pasta with salt and black pepper to taste.
  5. Serve warm, garnished with fresh parsley.
