Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour and sugar until combined.
  3. In another bowl, mix ricotta cheese, egg, vanilla extract, and lemon zest until smooth.
  4. Gradually add the dry mixture to the wet ingredients until a soft dough forms.
  5. Cover and let it rest for 30 minutes.
  6. Roll out the dough to ¼ inch thick on a floured surface.
  7. Cut into rectangles (about 2×3 inches) and prepare filling by mixing more ricotta with chocolate chips and pistachios.
  8. Place filling on each rectangle, fold over, and seal edges.
  9. Bake for 15-18 minutes until golden brown.
  10. Cool before dusting with powdered sugar.
