  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup ricotta cheese
  • 1/4 cup powdered sugar
  • 1/4 teaspoon cinnamon
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream softened butter and granulated sugar until fluffy. Beat in egg and vanilla.
  4. Gradually add dry ingredients to the wet mixture until just combined.
  5. In another bowl, mix ricotta cheese, powdered sugar, cinnamon, and mini chocolate chips for filling.
  6. Roll dough into 1-inch balls and coat with cinnamon-sugar mixture.
  7. Place on a baking sheet and flatten slightly before baking for 10-12 minutes until golden.
  8. Cool on wire racks before spreading ricotta filling on one side and sandwiching with another cookie.
