  • 2 gala apples (peeled, cored, and diced)
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons brown sugar (or honey)
  • 2 tablespoons butter (chopped)
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup raisins
  • 1/4 cup pecans (or walnuts)
  • 1/4 cup dried cranberries

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the cubed butternut squash, diced apples, cinnamon, vanilla extract, and brown sugar until well combined.
  3. Add salt and pepper to the mixture, stirring well to incorporate.
  4. Transfer the mixture to a baking dish with a lid, spreading it evenly.
  5. Scatter chopped butter on top, cover with the lid, and bake for 15 minutes.
  6. Remove from the oven, stir in raisins, dried cranberries, and nuts. Mix gently.
