  • 1 1/2 pounds peeled, seeded, and small cubed butternut squash (about 2 cups)
  • 2 gala apples (peeled, cored, and diced or your choice of sweet apple)
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla
  • 2 tablespoons brown sugar (or honey)
  • 2 tablespoons butter (chopped into sections)
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup raisins
  • 1/4 cup pecans (or walnuts)
  • 1/4 cup dried cranberries

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together butternut squash, apples, cinnamon, vanilla, and brown sugar until well combined.
  3. Add salt and black pepper; mix again to evenly coat.
  4. Transfer the mixture to a baking dish with a lid. Dot the top with butter and cover tightly.
  5. Bake for 15 minutes to soften the squash.
  6. Remove from oven, stir in raisins, cranberries, and nuts; cover again.
  7. Bake for another 15 minutes until everything is tender and lightly browned.
