Instructions

  1. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed. Beat until light and fluffy—about 2-3 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract until fully incorporated.
  4. Gradually add your dry mixture to the wet mixture on low speed until just combined. Be careful not to overmix.
  5. Once your dough is formed, divide it into two equal portions. Shape each portion into disks, wrap them in plastic wrap, and refrigerate for at least one hour.
  6. In a small bowl, combine brown sugar, cornstarch, and cinnamon until evenly distributed for the filling.
  7. After chilling, preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper. Roll out one disk of dough on a floured surface until it's about ¼ inch thick.
