  • 3 large ripe bananas (mashed), plus 1 halved lengthwise
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 cup dark brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • ½ teaspoon ground nutmeg

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8.5-by-4.5-inch loaf pan.
  2. In a light-colored sauté pan, melt the unsalted butter over medium heat until golden brown; let cool slightly.
  3. In a bowl, mix mashed bananas with eggs until combined.
  4. In another bowl, whisk together flour, dark brown sugar, baking powder, cinnamon, salt, and nutmeg.
  5. Fold banana mixture into dry ingredients; add melted brown butter and stir until just combined.
  6. Pour batter into prepared loaf pan and top with halved banana and extra dark brown sugar.
