  • ½ cup granulated sugar
  • 1 packet (7g) instant yeast
  • ½ teaspoon salt
  • ½ cup whole milk, warmed
  • 2 large eggs
  • ¼ cup unsalted butter, melted
  • Zest of 1 lemon (optional)
  • For the Cream Filling: 2 cups whole milk, ½ cup granulated sugar, 4 large egg yolks, ¼ cup cornstarch, 2 teaspoons vanilla extract
  • Vegetable oil (for frying)
  • Powdered sugar (for dusting)

Instructions

  1. In a large bowl, mix flour, sugar, instant yeast, and salt. Add warm milk, eggs, melted butter, and lemon zest if desired. Combine to form a soft dough and knead until smooth.
  2. Place the dough in a greased bowl and cover it with a towel. Let it rise in a warm area until doubled in size (about 1 hour).
  3. While the dough rises, prepare the cream filling by heating milk in a saucepan. In another bowl, whisk together sugar, egg yolks, cornstarch, and vanilla. Gradually add warm milk while whisking. Cook over medium heat until thickened; then stir in butter.
  4. Once risen, punch down the dough and roll it out to about ½ inch thickness. Cut circles and let them rise again until puffy.
  5. Heat vegetable oil in a deep pot to around 350°F (175°C). Fry each circle until golden brown on both sides.
  6. Allow cooled bomboloni to be filled with pastry cream using a piping bag.
  7. Dust generously with powdered sugar before serving.
