  • 1 ½ cups graham cracker crumbs
  • 2 tablespoons granulated sugar
  • ⅓ cup unsalted butter (melted)
  • 4 packages cream cheese (softened)
  • 1 ¼ cups granulated sugar
  • ½ cup sour cream
  • 2 teaspoons vanilla extract
  • 5 large eggs (room temperature)
  • ½ cup rainbow jimmies
  • Whipped cream for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl; mix well. Press into the bottom of a springform pan.
  3. In a separate bowl, beat softened cream cheese until smooth. Gradually add sugar until fluffy, then mix in sour cream and vanilla. Add eggs one at a time, mixing just until combined.
  4. Gently fold in rainbow jimmies to the filling mixture.
  5. Pour filling over the crust and bake for about 60 minutes until set but slightly wobbly in the center.
  6. Allow to cool at room temperature before chilling in the fridge for several hours or overnight. Top with whipped cream before serving.
