Ingredients

Scale
  • 1.5 lbs beef tenderloin
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 4 garlic cloves, minced
  • 1 tbsp fresh thyme (or rosemary)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the beef tenderloin dry and season with salt, pepper, and Dijon mustard.
  3. In an oven-safe skillet, heat olive oil over medium-high heat. Sear the beef for about 3-4 minutes on each side until golden brown.
  4. Transfer the skillet to the oven and roast for 15-20 minutes until the internal temperature reaches 145°F (63°C).
  5. Remove the beef from the skillet to rest. In the same skillet, sauté minced garlic until fragrant, then add chicken broth and scrape up browned bits. Stir in heavy cream and remaining Dijon mustard.
  6. Slice the rested beef into medallions and serve drizzled with the sauce alongside roasted vegetables or a fresh salad.
