  • ⅔ cup mashed banana (overripe banana)
  • 1 cup unsalted butter (room temperature)
  • 2 ½ cups powdered sugar
  • 2 tsp vanilla extract
  • ¼ tsp salt
  • 2 tbsp heavy cream
  • ½ cup semisweet chocolate chips
  • ¼ cup heavy cream
  • 1 tbsp rainbow sprinkles
  • 12 maraschino cherries

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together milk, egg, vegetable oil, vanilla extract, and mashed banana.
  3. Gradually combine the wet ingredients with the dry mixture until just combined—be careful not to overmix.
  4. Line a muffin tin with cupcake liners and fill them two-thirds full with batter. Bake for 20 minutes or until a toothpick comes out clean. Allow cooling completely before frosting.
  5. For the frosting, beat room-temperature butter until creamy. Gradually add powdered sugar and mix well. Incorporate vanilla extract and heavy cream to achieve your desired consistency.
  6. To prepare the chocolate ganache, heat heavy cream until simmering and mix in chocolate chips until smooth.
