  • 2 large chicken breasts (sliced into thin fillets)
  • 4 oz cream cheese (softened)
  • 3/4 cup heavy cream
  • 4 cloves garlic (minced)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/4 cup Parmesan cheese (grated)
  • 3/4 cup mozzarella cheese (grated)
  • 8 oz sun-dried tomatoes (chopped)
  • 3/4 cup fresh spinach (chopped)
  • Salt and pepper (to taste)

Instructions

  1. Preheat oven to 400°F (204°C).
  2. Season chicken fillets with salt and pepper; place in a baking dish.
  3. In a bowl, mix softened cream cheese and heavy cream until smooth. Add garlic, onion powder, paprika, Italian seasoning, Parmesan, and half of the mozzarella; blend well.
  4. Spread sauce over chicken; add chopped sun-dried tomatoes and drizzle with reserved oil.
  5. Cover with foil and bake for 20 minutes.
  6. Stir in spinach and top with remaining mozzarella; bake uncovered for another 10 minutes until cheese is melted.
