  • 10 oz frozen spinach (thawed and drained)
  • 1 onion (sliced)
  • 2 cloves garlic (minced)
  • 7 oz sour cream
  • 5 oz mozzarella cheese (shredded)
  • 1 tbsp olive oil

Instructions

  1. Sauté sliced onions in olive oil over medium heat until translucent (3-4 minutes). Add minced garlic and cook for an additional 30 seconds.
  2. Stir in thawed spinach, seasoning with salt and pepper; cook for 2-3 minutes until heated through. Mix in sour cream until combined.
  3. Preheat oven to 350°F (175°C). Season salmon fillets with salt and pepper, then sear them for about 2 minutes per side in a separate pan.
  4. Place seared salmon skin-side down in a greased baking dish. Spread the spinach mixture over each fillet, then top with shredded mozzarella.
  5. Bake for 15-20 minutes until salmon reaches an internal temperature of 145°F and cheese is golden brown.
  6. Let rest for 2-3 minutes before serving.
