  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup parsnips, diced
  • 1 cup celery, diced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides; remove from pot.
  2. In the same pot, sauté onion and garlic for about 3–4 minutes until translucent.
  3. Stir in tomato paste and cook for one minute to enhance flavor.
  4. Deglaze the pot with a splash of beef broth, scraping up any flavorful bits.
  5. Return beef to the pot along with remaining broth and add carrots, potatoes, parsnips, and celery.
  6. Season with thyme, rosemary, salt, and pepper.
  7. Bring to a boil; reduce heat and simmer covered for about 2 hours until beef is tender.
  8. Adjust seasoning if necessary before serving hot with fresh parsley as garnish.
