Ingredients

Scale
  • 8 ounces angel hair pasta
  • 1 pound large shrimp (peeled and deveined)
  • 1 bunch fresh asparagus (trimmed and cut into 2-inch pieces)
  • 3 tablespoons olive oil (divided)
  • 3 cloves garlic (minced)
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper (to taste)
  • 1/4 cup freshly grated Parmesan cheese
  • Juice of 1 lemon
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Cook the pasta: Boil salted water and cook angel hair until al dente, about 3-4 minutes. Reserve one cup of pasta water before draining.
  2. Sauté the shrimp: Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink; season with salt and pepper.
  3. Sauté the asparagus: Add the remaining olive oil to the skillet and sauté asparagus for 3-4 minutes until bright green. Stir in garlic during the last minute.
  4. Combine: Return drained pasta to the skillet with shrimp. Add reserved pasta water, lemon juice, and Parmesan cheese; toss gently.
  5. Final touches: Season to taste with salt, pepper, or red pepper flakes. Garnish with parsley before serving.
