  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 2 cups dried apricots, chopped
  • 1 1/2 cups water
  • 1/2 cup granulated sugar (adjustable)
  • 2 tablespoons fresh lemon juice
  • Optional: 1/4 teaspoon almond extract

Instructions

  1. Prepare the apricot filling by simmering chopped dried apricots, water, and sugar in a saucepan until tender. Stir in lemon juice and optional almond extract.
  2. Preheat your oven to 375°F (190°C). Grease or line your baking pan.
  3. For the crust, whisk together flour, sugar, baking powder, and salt. Cut in cold butter until crumbly. Mix in the beaten egg and vanilla.
  4. Reserve some dough for topping and press the rest into the pan. Spread the cooled apricot filling over it.
  5. Crumble reserved dough on top and bake for about 30-35 minutes until golden.
  6. Let cool before cutting into bars.
