  • 150 g granulated sugar
  • 4 egg yolks
  • 600 ml milk (whole, skimmed, lactose-free, or plant-based)
  • 2 tbsp cornstarch
  • 50 g granulated sugar for custard
  • 2 tsp vanilla bean paste

Instructions

  1. Peel and slice apples thinly; toss with sugar, salt, and cornstarch.
  2. Cook apple mixture in a pan over medium heat until softened and caramelized (about 20 minutes).
  3. Whisk together egg yolks, cornstarch, sugar, salt, and vanilla in a bowl; gradually stir in milk.
  4. Pour the mixture into a saucepan over low heat and stir constantly until thickened (10-15 minutes).
  5. Layer cooked apples and custard alternately in a mold; finish with custard on top.
  6. Refrigerate for at least an hour before serving.
