  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (room temperature)
  • 2 large eggs
  • 1 1/2 cups diced apples (Granny Smith or Honeycrisp)
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg (optional)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sour cream (or Greek yogurt) (room temperature)
  • 1 teaspoon pure vanilla extract
  • 1/2 cup milk (room temperature)
  • For the Crumble Topping: 3/4 cup all-purpose flour, 1/4 cup packed light brown sugar, 2 tablespoons granulated sugar, 1 teaspoon ground cinnamon (optional), 4 tablespoons unsalted butter (melted)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a muffin tin with liners.
  2. In a bowl, combine flour, baking powder, salt, and spices.
  3. In another bowl, cream together the sugars and butter until fluffy. Add eggs, sour cream, and vanilla; mix well.
  4. Gradually incorporate the dry ingredients into the wet mixture along with milk until just combined. Fold in diced apples.
  5. Fill muffin cups three-quarters full with batter and top with crumble mixture made from flour, brown sugar, granulated sugar, cinnamon, and melted butter.
  6. Bake for about 20 minutes until golden brown. Cool briefly before transferring to a wire rack.
