  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled and sliced)
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 3 large eggs (room temperature)
  • 55 g unsalted butter (melted)
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats

Instructions

  1. Preheat oven to 160°C (320°F).
  2. Crush biscoff cookies in a food processor; mix with melted butter to form the crust. Press into a springform pan.
  3. In a bowl, toss apple slices with brown sugar, cinnamon, and cornstarch.
  4. Beat cream cheese and granulated sugar until smooth; add Greek yogurt, eggs one at a time, vanilla extract, and spices. Mix until combined.
  5. Layer half of the cheesecake filling over the crust followed by half of the apple mixture; repeat layers.
  6. Bake for 70-85 minutes; let cool in the oven with the door ajar to prevent cracking.
  7. Prepare the streusel topping; mix butter, flour, brown sugar, oats, and nuts if desired. Sprinkle over cheesecake and bake for an additional 15 minutes.
  8. Chill for at least four hours before serving.
