  • 150 g unsalted butter (melted)
  • 55 g unsalted butter (melted) for topping
  • 50 g all-purpose flour
  • 50 g brown sugar (for topping)
  • 20 g rolled oats
  • 3 tart apples (peeled, cored, and sliced)
  • 50 g brown sugar (for apple filling)
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon (for cheesecake filling)
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs (room temperature)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Crush the biscoff cookies into fine crumbs and mix with melted butter. Press into the bottom of a springform pan.
  3. For the streusel topping, mix melted butter, flour, brown sugar, and oats until crumbly.
  4. Toss apple slices with brown sugar and cinnamon; layer over the crust.
  5. Beat cream cheese with granulated sugar until smooth; add Greek yogurt, eggs, and spices. Pour over apples.
