  • 2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 4 cups apples, peeled and sliced
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1 cup oats
  • 1/2 cup flour
  • 1/3 cup brown sugar
  • 1/4 cup softened butter

Instructions

  1. Preheat oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the base of a springform pan and bake for 10 minutes.
  2. In another bowl, beat softened cream cheese and sugar until smooth. Add vanilla extract and eggs one by one, mixing well.
  3. Toss sliced apples with brown sugar and cinnamon until coated.
  4. Layer half of the cheesecake filling over the crust, add spiced apples, then top with remaining cheesecake filling.
  5. For the crisp topping, combine oats, flour, brown sugar, and softened butter until crumbly. Sprinkle over the cheesecake layers.
  6. Bake for 50-60 minutes until edges are set but center is slightly wobbly. Cool completely before slicing.
