  • ½ cup granulated sugar
  • ¼ cup plus 2 teaspoons brown sugar (light or dark, packed)
  • ¼ cup apple butter or applesauce
  • 2 eggs
  • ¼ teaspoon vanilla
  • 3 tablespoons butter (melted)
  • ¼ cup sugar
  • ½ teaspoon cinnamon
  • ½ cup unsalted butter (room temperature)
  • 1 ¼1 ½ cups powdered sugar (sifted)
  • 1 pinch of salt
  • 4 ½ ounces cream cheese (room temperature)
  • 2 tablespoons brown sugar (light or dark)
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Reduce 2 cups of apple cider in a saucepan until it reaches 1/4 cup.
  2. In one bowl, sift together flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. In another bowl, cream together butter with sugars until fluffy. Add eggs and cooled apple cider mixture; mix well.
  4. Gradually incorporate dry ingredients into wet ingredients until just combined.
  5. Scoop mounds of dough onto lined baking sheets and bake for 11-13 minutes.
  6. Let cool before filling with either cream cheese icing or your preferred frosting.
