  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F and prepare a 9" square baking dish.
  2. In a sauté pan, boil fresh apple cider until reduced by half (about 5 minutes). Stir in diced butter until melted.
  3. In a bowl, whisk together eggs, sugars, oil, sour cream, baking powder, baking soda, cinnamon, and salt until well combined.
  4. Gradually whisk in the reduced cider mixture.
  5. Gently fold in flour until just combined.
  6. Pour batter into the prepared dish and bake for 22-25 minutes until golden brown.
  7. Cool slightly before topping with butter and cinnamon-sugar mixture.
