  • 1/2 cup pitted Kalamata olives
  • 1/4 cup pitted green olives
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley
  • 1/4 cup fresh dill
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash the potatoes thoroughly. Cut larger ones into halves or quarters.
  2. Place potatoes in a pot, cover with cold water, add salt, and bring to a boil. Reduce heat and simmer until fork-tender (15-20 minutes).
  3. Drain and let the potatoes cool slightly.
  4. In a bowl, whisk together olive oil, lemon juice, apple cider vinegar, Dijon mustard, garlic, salt, and pepper.
  5. In a large bowl, combine cooled potatoes with olives, feta (or substitute), parsley, and dill. Mix gently.
  6. Pour dressing over the mixture and toss until coated.
